Thirsty Thursday ~ Strawberry Watermelon Cooler

Summer time and the livin' is easy.  Kids are swimming and the sun is extra hot.  

Don't you want to cool down?  What better way than with an icy fresh beverage with what else...RUM!

During the summer, fresh fruit is bountiful....especially strawberries and watermelon.  They are the inspiration for this week's drink! 





Strawberry Watermelon Cooler


Ingredients:
  • 1 cup fresh watermelon, roughly chopped
  • ½ cup fresh strawberries, diced
  • 1 cup coconut milk
  • 1 tbsp. agave nectar
  • 1 cup ice
  • 1 cup of white rum (I like Bacardi)

Directions:
  1. In a blender combine watermelon & strawberries.  
  2. Strain the mixture so that the seeds are removed.
  3. Then combine the fruit mixture, coconut milk, agave nectar, rum and ice; pulse until smooth.
  4. Divide between 4 glasses. You can optionally add one shot of rum or tequila to each glass. Serve with a straw and garnish with strawberry slices or watermelon wedges.
  5. Serve immediately.

Thirsty Thursday ~ Skinny Piña Colada

Ok ladies.....the Piña Colada is one of my all time favorite drinks.  It's SOOO full of calories and sinful, that I don't order it unless I'm on vacation....because as we all know, calories don't count on vaca!  

Since I'm on this new kick (at least for the time being) of watching what I put in my body and trying to get in shape, I'm always on the look out for low-cal cocktails.  

I found this awesome one from this awesome blogger Tina at CarrotsNCake.com.  Her blog is full of delicious food that is healthy.  Check it out and give her some love....



This Skinny Piña Colada has nowhere near the fat and calories of a regular Piña Colada because Tina used coconut water instead of coconut cream and added just a splash of pineapple juice.

Skinny Piña Colada

Ingredients:

  • 2 oz Barcardi Rock Coconut Rum
  • 5 oz coconut water
  • 2 oz pineapple juice
Directions:

  1. Combine ingredients in a cocktail shaker with ice.
  2. Shake and strain into a glass filled with ice.
  3. Garnish with a slice of pineapple and/or a Maraschino cherry (optional).
  4. Drink and enjoy!
Makes 1 cocktail

Thirsty Thursday ~ Blood Sucker

I want to suck your blood!!!

Oh I love me some vampires!  I've read all of the Twilight books, seen the movies, and watch Vampire Diaries religiously.  The whole concept is so intriguing!  Here is a Halloween type cocktail inspired by those handsome blood thirsty characters:


The Blood Sucker

Ingredients:
• 1 1/2 ounces Bacardi O
• 1/2 ounce Cointreau
• 2 ounces pineapple juice
• 1 Tbs. strawberry or raspberry puree

Preparation:
In a shaker with ice, pour rum, Cointreau and juice. Shake and pour into a rocks glass. Dip the end of a drinking straw into the puree, hold the tip of your finger over the other end and use the straw to squirt puree into the bottom half-inch of the drink, where it will sink in red blobs. Do not stir.

Then you can rim your glass in this wonderfully bloody concoction from Hostess {with the mostest} that would make any vampire's heart melt!

The “blood rim” is made from the same kind of mixture as you’d use to make hard candy. It’s actually pretty easy, but you will need a candy thermometer (which you can find at most grocery stores). 

Ingredients:
1 c. Sugar
1/2 c. Karo Syrup
1/2 c. Water
Red Food Coloring

Directions:
Combine sugar, syrup and water. Cook without stirring to hard crack stage – which is 300 degrees F. Add food coloring.
Turn off heat. While the mixture is still hot, dunk the top of the cocktail glass into the mixture to create the red rim. If you need to do several glasses, keep the mixture hot so it lasts longer (instead of turning heat off, just reduce slightly).  You can go anywhere from just along the very tip of the rim to part way down the glass – whichever you prefer. Flip the glass right side up to cool. The thick consistency of the mixture will cause “drips” as it hardens on the glass!

Thirsty Thursday ~ Bacardi Coconut and Pineapple

So I have been in the mood for rum lately.  Maybe I feel like being whisked away to a Caribbean island...instead my 5 year old is having his birthday party at a water park.  I guess that will have to do!


Anyhow, I was playing on the Bacardi site again and found a new beverage...totally what I want right now! The perfect mix to any tropical oasis....uh, I mean water park!


Bacardi Coconut & Pineapple


Ingredients:
2 parts Bacardi Coco
4 parts pineapple juice (best if fresh squeezed)
Ice
Pineapple wedges for garnish


1.  Fill a highball glass with ice.
2.  Pour in the Bacardi Coco and pineapple juice.
3.  Mix well.
4.  Garnish with pineapple.


I wonder if I can have alcohol at a water park.....I guess I'll wait until I get home!

Thirsty Thursday...Bacardi Rum 'N' Coke Float

As a child, my dad would make Coke floats with me on hot days.  He recently taught my kids to do the same...now they want one for breakfast, lunch and dinner!!

Recently I was playing on the Bacardi site.  They have this cool Mix Master link where you can choose ingredients and your level of difficulty, and it will spit out a cocktail recipe.  {SO FUN!}  And I came across my childhood favorite with an adult twist!!  How excited was I???

Bacardi Rum 'N' Coke Float

Ingredients:
2 parts Bacardi Superior Rum
3 parts Coca-Cola
1 ball of vanilla ice cream
cubed ice


1.  Fill high ball glass with ice.
2.  Pour on the Bacardi Superior Rum
3.  Top with chilled Coca-Cola
4.  Finish with a scoop of vanilla ice cream


Who said the kids get to have all the fun???!!
